Shakshuka is a simple, healthy meal in Israel, Tunisia, and beyond. It's essentially eggs poached in a spicy tomato sauce. It’s perfect for breakfast, but hearty enough for dinner.
Ingredients
1 tablespoon olive oil
1/2 medium onion, diced
1 clove garlic, minced
1 bell pepper, seeded and chopped
2 cups tomatoes, crushed or chopped
1 tsp cumin, 1 tsp paprika
4 large eggs
Fresh cilantro for garnish
Instructions
Sauté: Heat oil in a large skillet over medium heat. Add onion, bell pepper, and garlic. Cook until softened.
Simmer: Add tomatoes and spices. Reduce heat and simmer for 10 minutes until the sauce thickens.
Poach: Use a spoon to make small wells in the sauce. Crack an egg into each well. Cover the skillet.
Finish: Cook for 5-8 minutes until egg whites are set but yolks are still runny. Garnish and serve.
